  • Wash and tear leaf lettuce into bite sized pieces and arrange in salad plates.
  • Place beets,carrots and apples in three separate mounds on each plate.
  • Whisk the oil, vinegar, honey, salt, cinnamon and pepper together until well combined.
  • Drizzle some dressing over the grated vegetables and garnish with toasted walnuts.

  1. I am amazed, I don't actually normally like beets, my husband does and we had beets in the house so I looked and found this recipe for a night when we had a few friends over. I'm so pleased! We will definitely be making this again. It looks beautiful and tastes great. I also did not have raspberry vinegar in the house, but I mashed 2 strawberries with white vinegar and made everything else as instructed, it was delicious! Four of us at dinner expressed skepticism over beets, but everyone cleaned their plate!
     
  2. This was a completely unique idea to me. I wouldn't have ever though of using raw beets. They went very well with the apple and carrots. I have always stayed away from beets. Didn't know what to do with them. This has opened up a whole other line of thought for me. I enjoyed this & will probably make it again in the future. Thank you very much for opening my eyes!
     
  3. This is phenomenal!!! I was wary of eating raw beets and a little concerned about the spiciness of cinnamon. I even checked another website to verify that we can eat beets raw. I only did the beets and I used an immersion blender for the dressing to which I added some fresh strawberries for a little more fruitiness. I wore latex gloves and used the food processor for grating. I could've eaten all of it! Thank you for my new favorite beet salad recipe. Next time I'll add the carrots, apples and walnuts, but the beets and dressing alone are FAB!!!
     
  4. This was a great alternative to our usual green salad. I didn't have any raspberry vinegar, so i used white wine vinegar and mooshed some blackberries into it thru a strainer. Turned out just fine.

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
