Directions

  1. Using a swivel vegetable peeler, remove the skin from a large, straight cucumber.
  2. Then cut long, thin strips of flesh using the same peeler, like flat noodles.
  3. Mix in a bowl with seasoning and a light sprinkling of rice wine vinegar.
