Salmon and Feta Salad

"I actually like canned salmon, and I wanted to create a salmon salad without mayo (not one of my favorite things). This is good for a lower carb diet, too."

• Serves: 6

ingredients

• 418.15 g canned salmon, drained
• 170.09-226.79 g feta cheese, crumbled
• 29.58 ml fresh dill weed, chopped
• 2 whole lemons, juiced
• 29.58 ml extra virgin olive oil
• 118.29 ml chopped green bell pepper
• 118.29 ml chopped scallion
• 118.29 ml ripe olives, sliced
• 29.58 ml capers, chopped
• 2 whole tomatoes, diced

directions

1. Combine all ingredients, and chill well.
2. You might wish to add blanched and cooled green beans for a variation, and perhaps a little wine vinegar.
